Dissolved oxygen in brewing

Excess dissolved oxygen accelerates oxidation and can affect beer stability, hop aroma, and the sensory profile of the final product. For a craft brewery such as Yo-Ho, where each beer depends on carefully balanced aromas and flavors, controlling oxygen is essential. However, as beer passes through piping, pumps, tanks, filtration and carbonating systems, and filling machines, it can be difficult to determine exactly where oxygen enters the process.

Yo-Ho's measurement requirements

Yo-Ho needed a way to monitor dissolved oxygen continuously at key points in the production line. The brewery wanted to identify oxygen pickup quickly, improve process traceability, and make quality-control decisions using current measurement data. The solution also had to be easy to operate and maintain without requiring specialized knowledge.

Real-time control with Oxy 5100

Oxy 5100 measures dissolved oxygen directly in the production line and displays the results in real time. By monitoring individual stages of the transfer process, Yo-Ho can pinpoint where oxygen pickup occurs and identify the process steps that require improvement. Its compact, stand-alone design also makes the measurement data easy to view and act on.

Oxy 5100 requires little maintenance and can be operated without specialist knowledge. This helps Yo-Ho maintain stable operation regardless of individual operator experience. It also reduces the need for specialized configuration and training, while the unified design gives the quality-control team direct access to the information needed for process adjustments.

Results and future expansion

According to Yo-Ho brewer Takumi Matsumoto, the brewery has reduced dissolved oxygen levels by half since installing Oxy 5100. This has improved process traceability and the accuracy of quality control. The real-time measurements also reduce the need for repeated manual sampling, saving time during sample collection and analysis and supporting more efficient day-to-day operations.

Yo-Ho plans to extend the use of Anton Paar inline measurement solutions to its new Osaka factory, Yona Yona Beerise, scheduled to open in July 2026. The site will focus on developing new beers and experimenting with styles such as fruit ales. With continued support from Anton Paar experts, Yo-Ho aims to refine its processes as it expands production.
