The Brabender ExtensoGraph tests dough under real-life conditions, meets global key standards, and ensures data acceptance along the entire value chain by using the internationally-recognized ExtensoGraph/Brabender Units (EU/BU). Achieve reliable results, even with extremely strong (up to 2,000 EU) or elastic dough (up to 300 mm).
The MetaBridge software simplifies measurements according to all relevant standards and enables remote access, data sharing, and export to colleagues and third-party systems (LIMS, ERP, email).
The modular Brabender ExtensoGraph design allows for a customizable workplace setup and accelerated workflows for more throughput.

Natural fermentation processes take time and cannot be sped up. This is why the ExtensoGraph is designed for testing dough extensibility, stretching, and processing under real-life conditions in full compliance with national and international standards, including ICC, AACCI, and ISO. No shortcuts, no compromises. Standard compliance and measuring results in ExtensoGraph/Brabender Units (EU/BU) ensure simplified communication in a commonly used language along the entire value chain of dough analysis.
ExtensoGraph: Custom configurations for enhanced performance
The ExtensoGraph is also available in a modular setup, in addition to the all-in-one instrument, letting you configure work steps (balling and long molding, fermentation, stretching) according to your needs. Increase your throughput with extra balling units (ExtensoPrep). Ensure best reproducibility with a second stretching hook (ExtensoBase). Improve fermentation throughput with additional fermentation cabinets (ExtensoFerm). The modular setup optimizes space usage and let you flexibly place modules throughout the lab.
Streamline data transfer with MetaBridge
MetaBridge operating software is the industry benchmark and empowers users to gain comprehensive data insights, while being so intuitive that hardly any training is required. It simplifies measurements according to important standards with a single click, and lets you access measurements from any device and location. The correlations add-on feature lets you conduct comprehensive measurements comparisons.
By connecting multiple instruments and transferring data from FarinoGraph to ExtensoGraph, you'll reduce throughput times and minimize data transcription errors. You can export and share data with colleagues and third-party systems such as LIMS, ERP, or email.
Tailor-made, efficient dough analysis for experienced users
Thanks to a new and enhanced humidity and temperature management system, users are able to control temperature and humidity conditions in the fermentation chamber to match their precise test requirements. Compared to previous ExtensoGraph generations, a new ultrasonic evaporator inside the fermentation chamber maintains stable humidity levels, preventing water buildup and therefore reducing cleaning efforts. The chamber temperature can be compensated to reflect varying environmental conditions ranging from room temperature up to 40°C. Plus, save up to 45 minutes per sample with the only standards-compliant, high-speed method on the market. ExtensoGraph has never been more powerful.
Unique dough evaluation capabilities
The Brabender ExtensoGraph tests under genuine production conditions. It meets your testing needs, even when you're working with unconventional doughs. The new, more powerful lifting unit allows you to measure from exceptionally robust (up to 2,000 EU) to remarkably elastic (up to 300 mm) doughs. In contrast to other measuring methods, doughs with a very high and/or strong gluten content can also be measured. The Micro-ExtensoGraph is a unique conversion kit, designed to significantly decrease sample volume, saving 260 g. It’s especially well-suited for breeders and producers working with high-cost raw materials, such as enzymes, and it integrates with existing 50 g FarinoGraph Mixers.
Effect of additives on rheological dough properties
The ExtensoGraph method effectively visualizes the complete influence of additives on dough properties over an extended measuring period. Unlike rapid methods with shorter measuring times, the ExtensoGraph allows additives to fully impact the dough, ensuring precise measurements of their effects and avoiding incorrect dosing. MetaBridge’s correlation feature provides a detailed analysis and comparison of how different additive amounts affect flour quality after various proving times, all mapped in the Extensogram.
