A traditional beverage with global recognition
Sake is a traditional Japanese alcoholic beverage brewed from polished rice, water, koji mold, and yeast. Dassai sake, produced by Asahi Shuzo Co. Ltd., is among the most famous sake brands worldwide. With an alcohol content of around 14 % v/v, Dassai gained international attention in 2014 when it was presented as an official gift by Japan’s Prime Minister to the U.S. President.
From rice starch to refined sake
Although often compared to wine, sake production is closer to beer brewing. The key process is converting rice starch into sugar, initiated today by koji mold. Carefully controlled fermentation and maturation steps are essential to achieving the desired aroma, clarity, and balance.
Reliable fermentation monitoring
For more than 10 years, Asahi Shuzo has used Anton Paar instruments to monitor fermentation stages and control product quality. The first Alcolyzer Sake system was installed in 2012; today, three systems are in use at the production site in Yamaguchi Prefecture.
