Emulsioni

Le emulsioni sono miscele di due liquidi immiscibili, uno dei quali è disperso nell'altro. Esempi classici di emulsioni sono il latte e la maionese. Il comportamento di queste sostanze è influenzato in particolare dall'interazione delle sue fasi disperse e continue. Le emulsioni possono essere caratterizzate usando molte tecniche di analisi differenti.
