Because each beer recipe requires defined malt properties, malt analysis is an essential quality control step in malt houses and breweries.
A common approach for evaluating malt performance is the analysis of congress wort. Congress wort is produced from malt using a standardized congress mash procedure and is then characterized by parameters such as extract, density, pH, viscosity, and color. These values provide practical information on the malt’s processability and its expected contribution to the brewing process.
While malt houses routinely perform these analyses, breweries may also check incoming malt to verify that it meets the required specifications before production.
