Material Brief: Jelly/Jam - True Density - Ultrapyc

Jelly was analyzed using helium gas on the Ultrapyc 5000. The true density was measured.

An important property of jellies and jams is its true density, which could be correlated to solid fruit or gelatin content, or used to determine the homogeneity from batch to batch. The Anton Paar Ultrapyc 5000 was used to analyze the true density of a store-bought jelly. The instrument is easily and repeatably capable of handling the “slurry-like” nature of the jelly.
