Scale-up of a High Moisture Extrusion Cooking Process

Scale-up of an extrusion cooking process is an important task when it comes to transfering a product which has been developed on a small scale extruder to a larger scale extruder. The aim is to produce a preferably identical product with a higher throughput and by using a larger machine.

To achieve this, the material has to undergo an equal thermo-mechanical treatment (cooking) inside the extruder and develop an equal structure inside the die or while exiting the die hole. This is quite challenging, due to the different equipment design as well as the different throughput rates. A fundamental understanding of the smaller scale extrusion production process is of great importance in order to successfully scale-up.
This technical note describes a scale-up method of a high moisture extrusion cooking process for a high moisture meat analogue (HMMA).
