Material Brief: Peanut Butter - True Density - Ultrapyc

Crunchy peanut butter was analyzed using helium gas on the Ultrapyc 5000. The true density was measured.

An important property of peanut butter is its true density, which can be correlated to solids content, used to determine the homogeneity from batch to batch, or needed to optimize the packaging. One challenge in measuring the density via traditional liquid density techniques is the viscosity or solid content of the food. The Anton Paar Ultrapyc 5000 was used to analyze the true density of a store-bought jar of crunchy peanut butter. The instrument is easily and repeatably capable of handling the semi-solid nature of the peanut butte.
