Material Brief: Condiments - True Density - Ultrapyc

Ketchup, mayonnaise, and mustard were analyzed using helium gas on the Ultrapyc 5000. The true density was measured.

Condiments are semi-solid products used with food around the world. Depending on the ratio of components, the consistency of the condiment may have different characteristics such as being thinner, thicker, or being oilier than its competitors. An important property of condiments is its true density, which could be used to determine the consistency and quality of a product from batch to batch. The Anton Paar Ultrapyc 5000 was used to analyze the true density of store-bought brands of ketchup, mayonnaise, and mustard. The instrument is easily and repeatably capable of handling the semi-solid nature of the condiments. Complementary rheological measurements on condiments can provide further information regarding a consumer’s experience with the product.
