Farinograph curves are normally straightforward in terms of identifying the dough development time (DDT): The point of greatest torque is the DDT. The Farinograph software is programmed to automatically identify the point of greatest torque (the peak of the curve) and select it as the DDT. However, there is a class of Farinograph curves where this becomes less straightforward due to the presence of two torque maxima. These are known as double peak curves, and they cause issues for operators trying to identify the DDT.
