Do You Dare to Replace Dairy? The Flow Behavior of Plant-Based Cream

Plant-based creams are a sustainable alternative to dairy-based creams and the demand for these products increased sharply in recent years. Flavor and consistency are expected to match dairy-based creams and analysis methods are required to characterize those products, to improve formulation and to monitor production processes.

1 Introduction
Plant-based nutrition isn’t just a current food trend. Statistics show that the global market for plant-based foods will increase in the coming years (1). Plant-based eating not only has positive effects on health (2) but also on the environment (3). Furthermore, ethical motives lead people to follow a plant-based diet and the food industry is therefore also working to develop more alternatives to animal products.
For this report, three plant-based creams were rheologically characterized and compared to dairy-based cream.
