Brabender Quadrumat Senior | How Milling Parameters Affect Flour Grinding Performance and Wheat Quality

The Brabender Quadrumat Senior is the largest laboratory mill manufactured by Anton Paar TorqueTec GmbH. In addition to grain moisture content, the selected sifter configuration is an important factor influencing milling performance and flour characteristics. But how do these settings affect the milling process, and what is the principle behind the different sifter configurations? This application report addresses these questions based on a series of systematic laboratory experiments.

Laboratory-scale cereal milling forms the basis for quality control, targeted product development, and commercial grain evaluation. To obtain reliable and reproducible analytical results, wheat must be milled into refined flour with a high reproducibility.
This application report investigates the extent to which laboratory milling results can be transferred to industrial milling processes. Particular attention is given to process parameters such as grain moisture content, throughput, and sifter configuration, which are not only economically relevant but also have a significant influence on particle size distribution and, consequently, on the functional properties of the resulting flour.
A comprehensive experimental study was conducted to systematically evaluate the influence of these parameters. In addition, the suitability of the Brabender Quadrumat Senior as a practical laboratory tool for flour quality assessment and process evaluation was investigated.
