Food, Beverage | Rotational Viscosity Testing of Gum Arabic with ViscoQC

One of the key properties of gum arabic is its viscosity when mixed with water. This application report shows how simple viscosity measurements of such solutions with ViscoQC 100/300 are performed to guarantee consistent high quality.

Introduction

Gum arabic obtained from Acacia trees is available in various particle sizes from coarse particles up to fine powders. Its color is white to yellowish white and it is taste- and odorless. The main constituent of gum arabic is arabinogalactan, which is a biopolymer consisting of arabinose and galactose.

Gum arabic is widely used for industrial purposes such as a stabilizer, thickener or emulsifier in various industries. For example: In the candy industry to emulsify fats and retard sugar crystallization and it is the emulsifier of choice in the beverage industry.

The key characteristic of gum arabic is that it forms highly viscous solutions only at high concentrations of 40 % - 50 %. In contrast to xanthan gum or carboxymethyl cellulose, gum arabic shows a Newtonian flow behavior because of the highly compact, branched gum arabic molecules.
