Interfacial Rheology on Weak Films

Coffee is a complex dispersion, which in many coffee drinks is topped by a foam structure of tiny bubbles. Interfacial shear rheology measures the adsorption of the amphiphilic ingredients and their network formation. With such weak films, it is unavoidable to resort to sensitive measuring devices and measuring systems. In this report, we show that the use of a modular compact rheometer with the interfacial rheology cell and the double wall ring allows oscillatory shear tests to be performed even with large amplitudes.
