Food | Refractometer in the Sugar Industry

Refractometers are widely used in the sugar industry to quickly determine the dry matter content of sugar solutions by Brix measurement or in combination with polarimetry to measure apparent purity. Anton Paar solutions meet the requirements of the relevant ICUMSA methods.

In sugar factories refractometers are used at two places, in the reception laboratory (mainly in sugar cane factories) and in the factory control laboratory.
The required reading accuracy for the refractometer is +/-0.05 °Brix. This specification is fulfilled by the Abbemat refractometer family from Anton Paar.
The refractive index of sugar solutions is used as a rapid method for approx. determination of dry substance content. For pure solutions of known composition, the refractive index measurement gives the exact dry substance content of the relevant sugar.
For technical solutions, which have additions of non-sugars, the refractive index measurement gives the dry substance content in a more or less good approximation, depending on the purity of the solution.
